  • 1 lb Chicken breasts (diced)

  • 4 cloves Garlic (minced)

Mustard Sauce

  • 1/2 cup Light mayo
  • 1 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tbsp Dijon mustard

Vegetables

  • 1 tbsp Olive oil
  • 1 Carrot (thinly sliced)
  • 1 cup Mushrooms (sliced in half)
  • 1 yellow Onion (chopped)
  • 1 Zucchini (chopped)
  • 1 tbsp Soy sauce (plus salt & pepper to taste)

Fried Rice

  • 2 cups Cooked white rice
  • 2 tbsp Butter
  • 4 cloves Garlic (minced)
  • 3 tbsp Soy sauce
  • 1 Egg
  • 4 Green onions (sliced)

Instructions

  1. Prepare the marinade: In a small bowl, combine sesame oil, soy sauce, hoisin sauce, minced garlic, and fresh ginger. Pour the mixture over the diced chicken, ensuring all pieces are coated evenly for optimal flavor infusion.
  2. Cook the chicken: Heat a large skillet over medium-high heat and cook the marinated chicken for about 10 minutes, stirring occasionally. Cook until the chicken is fully cooked and no longer pink inside. Remove the chicken from the pan and wipe the pan clean.
  3. Cook the rice and prepare mustard sauce: Cook white rice according to package instructions using a rice cooker or stovetop. While the rice cooks, mix the light mayo, soy sauce, rice vinegar, and Dijon mustard in a small bowl to create the mustard sauce. Set aside.
  4. Sauté the vegetables: Add olive oil to the cleaned skillet and heat over medium. Add thinly sliced carrot, halved mushrooms, chopped onion, and chopped zucchini. Season with salt, pepper, and 1 tbsp soy sauce. Cook for about 5 minutes until vegetables are tender yet crisp. Remove from heat and set aside.
  5. Prepare the fried rice: In the same skillet, melt butter over medium heat. Sauté minced garlic for about 30 seconds until fragrant, then add cooked rice and soy sauce. Stir and cook for 5 minutes, allowing the rice to heat thoroughly and absorb the flavors.
  6. Add scrambled egg to rice: Make a well in the center of the rice in the skillet and crack the egg into it. Scramble the egg gently until just set, then mix it evenly into the rice. Stir in sliced green onions, then remove from heat.
  7. Plate and serve: Arrange the fried rice on plates alongside the cooked chicken and sautéed vegetables. Serve the prepared mustard sauce on the side as a flavorful accompaniment.
