Ingredients

Scale

Vegetables

  • ½ cup shredded carrots
  • ½ cup snow peas
  • 1 medium red bell pepper, sliced
  • 2 cups broccoli florets

Chicken

  • 1 ½ lbs boneless, skinless chicken breasts, cut into 1-inch pieces

Seasonings & Sauces

  • 3 tbsp butter (divided: 2 tbsp and 1 tbsp)
  • ½ tsp ground black pepper
  • ½ tsp salt
  • ½ tsp onion powder
  • 4 tbsp garlic, minced
  • ⅓ cup low sodium soy sauce
  • ¾ cup low sodium chicken broth
  • 3 tbsp honey
  • 1 tsp sesame oil
  • 1 tbsp cornstarch

Instructions

  1. Sauté Vegetables: Heat 2 tablespoons of butter over medium-high heat in a large skillet. Add shredded carrots, snow peas, sliced red bell pepper, and broccoli florets. Cook for 4-5 minutes or until vegetables are tender but still crisp. Remove the vegetables from the skillet and place them on a plate. Cover to keep warm.
  2. Cook Chicken: Add the remaining 1 tablespoon of butter to the same skillet and melt. Season the chicken pieces with black pepper, salt, and onion powder. Add the chicken to the skillet and cook for 6-7 minutes, stirring occasionally, until all sides are nicely browned and cooked through.
  3. Sauté Garlic and Reintroduce Vegetables: Add the minced garlic to the pan and sauté for about 30 seconds until fragrant. Return the cooked vegetables to the skillet, stirring occasionally to combine with the chicken and garlic.
  4. Prepare Sauce: In a medium bowl, whisk together the low sodium soy sauce, chicken broth, honey, sesame oil, and cornstarch until the mixture is smooth and fully combined.
  5. Combine and Thicken: Pour the prepared stir fry sauce over the chicken and vegetables in the skillet. Stir occasionally and cook until the sauce thickens and coats the ingredients evenly.
  6. Serve: Serve the garlic honey chicken stir fry while hot over cooked rice. Enjoy your flavorful and wholesome meal!

Notes

  • For extra flavor, garnish with toasted sesame seeds or chopped green onions.
  • Use low sodium soy sauce and broth to control sodium levels.
  • Vegetables can be substituted with your favorites such as snap peas, baby corn, or mushrooms.
  • Make sure to stir the sauce continuously once added to avoid lumps from the cornstarch.
  • This dish pairs well with steamed rice or quinoa for a complete meal.
