Ingredients

Scale

Noodles

  • 1 pound udon noodles

Sauce & Flavorings

  • 2 tbsp avocado oil
  • 2 cups mushrooms, sliced
  • 4 garlic cloves, minced
  • 2 scallions, chopped
  • ½ tsp coarsely ground black pepper
  • 2 tbsp low sodium soy sauce (or tamarin)
  • 1 tbsp chili crisp (adjust to taste)
  • ¾ cup pasta cooking water, reserved
  • 2 tbsp white miso paste
  • 1 tsp cornstarch
  • ¾ cup oat cream (or heavy cream)
  • ½ cup grated Parmesan cheese

Instructions

  1. Prepare Ingredients: Slice the mushrooms, mince the garlic, and chop the scallions to get everything ready for cooking.
  2. Cook Noodles: Boil the udon noodles according to package instructions until al dente. Drain them, reserving some cooking water, then rinse the noodles briefly under cold running water to stop the cooking and prevent them from becoming too soft or sticky.
  3. Sauté Mushrooms and Aromatics: Heat avocado oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook until they release their moisture and start to brown. Stir in the minced garlic, chopped scallions, black pepper, soy sauce, and chili crisp, cooking everything together for about 1 minute to meld the flavors.
  4. Make Miso Cream Sauce: In a bowl, whisk ¾ cup of the reserved pasta water with cornstarch and white miso paste until smooth. Pour this mixture into the skillet with the mushrooms, stir to combine, then add oat cream and grated Parmesan. Bring the sauce to a gentle simmer, then reduce the heat to medium-low to thicken slightly.
  5. Toss Noodles in Sauce: Add the cooked noodles to the skillet and toss them thoroughly to coat with the creamy miso mushroom sauce. If the sauce is too thick, add a splash more of the reserved cooking water to loosen it. Serve immediately for best texture and flavor.

Notes

  • Do not overcook the noodles; they should remain chewy with a slight bite.
  • White or yellow miso paste works best for a balanced savory flavor without overpowering the dish.
  • Feel free to swap udon noodles with ramen, spaghetti, or linguine if unavailable.
  • For extra vegetables, add spinach, steamed broccoli, or asparagus.
  • For added protein, rotisserie chicken or shrimp are excellent additions.
  • Best toppings include sliced green onions, sesame seeds, nori, soft-boiled egg, extra chili crisp, or fresh herbs like cilantro or basil.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a nonstick pan over medium heat.
