Banana Bread Batter

  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)

Crumb Topping

  • 1 tsp cinnamon
  • 1 cup flour
  • 1 cup brown sugar
  • 6 Tbsp butter, cold

Instructions

  1. Preheat and prepare pans. Preheat the oven to 350°F (175°C) and grease two 8×4-inch loaf pans to prevent sticking during baking.
  2. Mash bananas and mix flavorings. In a small bowl, mash the bananas thoroughly, then add 2 tablespoons brown sugar, 1 1/2 teaspoons vanilla extract, and 3/4 teaspoon ground cinnamon. Mix until well combined.
  3. Cream butter and sugar. In a large mixing bowl, cream together the softened butter (1/2 cup) and 1 cup sugar using an electric mixer or by hand until the mixture is light and fluffy.
