For the Pot Roast:

  • 35 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp salt
  • 1 tsp black pepper
  • 68 pepperoncini peppers, whole
  • 12 tbsp pepperoncini pepper juice (from the jar)
  • 4 tbsp ghee
  • Extra salt & pepper for seasoning

Instructions

  1. Prepare the Chuck Roast: Take the chuck roast out of the fridge, pat dry, season with salt and pepper, and sear in a hot skillet. Transfer to the slow cooker.
  2. Deglaze the Pan: After searing the roast, deglaze the pan with beef broth, scraping up the browned bits. Pour the liquid over the chuck roast in the slow cooker.
  3. Season and Cook: Add chives, garlic powder, onion powder, dill, salt, and pepper to the roast. Place pepperoncini peppers around the meat, add pepper juice, and top with ghee. Cook on low for 8-10 hours or high for 5-6 hours until fork-tender.
  4. Serve: Serve the pot roast over your choice of sides and enjoy!
