Meringue:

  • 3 egg whites
  • ¾ cup granulated sugar

Additional Ingredients:

  • 23 Ritz crackers (or similar)
  • ¾ cup pecan pieces
  • 1 teaspoon vanilla extract
  • 8 ounces Cool Whip (or similar)

Instructions

  1. Preheat oven to 350℉ and lightly grease a 9-inch pie plate.
  2. In a clean mixing bowl, beat egg whites on low until foamy. Turn mixer to medium and slowly add sugar while beating.
  3. Once all sugar is incorporated, beat to stiff peaks.
  4. Crush crackers into bits, not crumbs.
  5. Stir in vanilla, cracker bits, and pecans into meringue until uniform.
  6. Spread mixture in prepared pie pan and bake for 25-30 minutes until lightly golden and set.
  7. Cool completely before topping with Cool Whip. For best texture, chill for 2 hours.
  8. Store leftovers in the refrigerator.
