Instructions

  1. Prepare the pork: Pat the pork shoulder dry thoroughly using paper towels to ensure better seasoning adherence and browning.
  2. Season the meat: In a small bowl, combine paprika, chili powder, salt, and black pepper. Rub this seasoning mix evenly all over the pork shoulder.
  3. Optional – Sear the pork: Heat a large pan over medium-high heat and sear the pork on all sides until it’s browned and caramelized, about 2–3 minutes per side. This step adds extra flavor but can be skipped.
  4. Add to slow cooker: Place the sliced onions and minced garlic at the bottom of the slow cooker, then set the pork shoulder on top.
  5. Add liquids and sauce: Pour the BBQ sauce, apple cider vinegar, and brown sugar evenly over the pork to coat it with flavor as it cooks.
  6. Cook: Cover and cook on low for 8–10 hours or on high for 4–6 hours, until the pork is very tender and easily pulls apart.
  7. Shred the pork: Carefully remove the pork from the slow cooker and use two forks to shred the meat into bite-sized pieces.
