Ingredients

Scale

Wonton Filling

  • 24 wonton wrappers
  • 6 oz ground pork
  • 8 medium shrimp, ground
  • 1 tsp fresh ginger, finely chopped
  • 1 tbsp soy sauce
  • 1 tbsp rice wine or dry sherry
  • 1 tsp light brown sugar

Soup

  • 6 cups chicken stock
  • Chicken breast, sliced (quantity about 6 oz)
  • Fresh spinach (about 1 cup)
  • Mushrooms and water chestnuts (optional, about ½ cup each)
  • Sesame oil, to taste
  • White pepper, to taste
  • 1 tsp scallions, finely chopped (for garnish)

Instructions

  1. Prepare Filling: In a mixing bowl, combine ground pork, ground shrimp, finely chopped fresh ginger, soy sauce, rice wine or dry sherry, and light brown sugar. Mix thoroughly to combine all ingredients evenly.
  2. Assemble Wontons: Place a small spoonful of the prepared filling onto the center of each wonton wrapper. Lightly wet the edges of the wrapper with water, then fold and seal the wonton tightly to prevent filling from leaking during cooking.
  3. Cook Wontons: Bring the chicken stock to a boil in a pot over medium-high heat. Gently drop the assembled wontons into the boiling broth. Cook for about 4 to 5 minutes or until the wontons float to the surface, indicating they are cooked through.
  4. Add Ingredients: Add sliced chicken breast, fresh spinach, and optional mushrooms and water chestnuts to the pot. Simmer for an additional 3-5 minutes until the chicken is cooked and the vegetables are tender.
  5. Season and Serve: Season the soup with sesame oil and white pepper according to your taste. Ladle the soup into bowls, garnish with finely chopped scallions, and serve hot for a delicious and comforting meal.
