Ingredients

Scale

Potatoes and Seasoning

  • 14 mini red potatoes
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Dash of paprika
  • Avocado oil spray

Toppings

  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup bacon, crumbled
  • 1/4 cup green onion, chopped

Instructions

  1. Boil Potatoes: Boil the mini red potatoes in a large pot of water for 12-15 minutes or until the potatoes are fork tender. Drain the water carefully.
  2. Preheat Oven: While potatoes are boiling, preheat your oven to 450°F (232°C) to prepare for baking.
  3. Cook Bacon: Cook the bacon according to package instructions until crispy. Once cooked, chop into small crumbled pieces.
  4. Smash Potatoes: Spread the boiled potatoes evenly on a parchment-lined baking sheet. Use a glass or mason jar to gently smash each potato to flatten them slightly without breaking apart.
  5. Season Potatoes: Spray the smashed potatoes lightly with avocado oil spray, then sprinkle evenly with sea salt, black pepper, garlic powder, onion powder, and a dash of paprika.
  6. Bake Potatoes: Place the baking sheet in the preheated oven and bake the potatoes for 15 minutes to crisp up the edges.
  7. Add Cheese and Bacon: Remove the baking sheet from the oven. Evenly sprinkle the shredded sharp cheddar cheese and crumbled bacon over the potatoes.
  8. Melt Cheese: Return the baking sheet to the oven for an additional 3-5 minutes until the cheese has melted and is bubbly.
  9. Garnish and Serve: Remove from oven and top with chopped green onions. Serve hot with ranch dressing or your favorite dipping sauce. Enjoy!

Notes

  • For extra crispy potatoes, poke holes in the potatoes and soak them in a bowl of ice water for an hour before boiling.
  • Make sure not to smash the potatoes too thin; they should maintain some thickness to hold toppings.
  • Feel free to substitute bacon with a vegetarian alternative to make the dish vegetarian friendly.
  • Leftover smashed potatoes can be refrigerated and reheated in the oven for best texture retention.
