  • 55g semi-sweet chocolate (baking chocolate)
  • 56g unsalted butter

Cake Mixture:

  • 60g powdered sugar
  • 1 egg
  • 1 egg yolk
  • 22g all-purpose flour
  • 7g cocoa powder

Instructions

  1. Preheat oven: Preheat oven to 200°C / 400°F.
  2. Prepare ramekins: Grease 2 ramekins with spray and dust with cocoa.
  3. Melt chocolate and butter: Melt chocolate and butter in short bursts. Stir until smooth.
  4. Add powdered sugar: Stir in powdered sugar.
  5. Whisk in eggs: Whisk in egg and yolk until smooth.
  6. Combine dry ingredients: Sift in flour and cocoa. Fold to combine.
  7. Divide into ramekins: Divide the batter into the prepared ramekins.
  8. Bake: Bake for 13 minutes. The center should jiggle.
  9. Rest and serve: Let the cakes rest for 2 minutes. Invert and unmold. Dust with powdered sugar and serve immediately.

Notes
