Ingredients

Scale

Eggs

  • 12 hard-boiled eggs

Filling

  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2–3 cloves roasted garlic, mashed
  • Salt and pepper to taste

Garnish

  • 1 teaspoon paprika
  • 2 tablespoons chopped chives (optional)
  • Cooked bacon bits (optional)
  • Optional herbs: tarragon, dill, or red pepper flakes for extra flavor

Instructions

  1. Boil the Eggs: Place the eggs in a pot and cover them with water. Bring the water to a boil, then reduce the heat to a simmer and cook for 12 minutes. After cooking, transfer the eggs to ice water to cool completely, then peel and slice each egg in half lengthwise.
  2. Prepare the Filling: Remove the yolks from the halved eggs and place them in a bowl. Mash the yolks thoroughly with mayonnaise, Dijon mustard, roasted garlic, salt, and pepper until the mixture is smooth and creamy.
  3. Fill the Eggs: Spoon or pipe the yolk mixture evenly into the hollowed egg whites. Be careful to fill each egg half neatly. Garnish the filled eggs with paprika, chopped chives, bacon bits, or additional herbs such as tarragon, dill, or a sprinkle of red pepper flakes for extra flavor.
  4. Serve: Chill the deviled eggs in the refrigerator until ready to serve. Serve immediately for the best flavor and texture.

Notes

  • Roasting the garlic before mashing enhances its sweetness and softens the pungency, creating a more balanced flavor.
  • For easier peeling, use eggs that are a few days old rather than very fresh eggs.
  • You can adjust the amount of mayonnaise and mustard to achieve your preferred filling consistency and tanginess.
  • Deviled eggs can be prepared a day in advance and refrigerated until serving to allow flavors to meld.
  • Experiment with garnishes to personalize your deviled eggs; smoked paprika or fresh herbs like dill add interesting variations.
