Instructions

  1. Cook Tater Tots: Cook the frozen tater tots according to the package instructions until crispy and golden brown. Set them aside for later use.
  2. Cook Sausage: Heat olive oil in a large cast iron skillet over medium-high heat. Add the breakfast sausage links with casing removed. Cook, crumbling the sausage as it cooks, until browned and cooked through, about 3-5 minutes. Drain excess fat, but reserve 1 tablespoon of the fat in the skillet.
  3. Scramble Eggs: Add the lightly beaten eggs to the skillet with reserved sausage fat. Cook over medium heat, stirring frequently, until the eggs just begin to set. Gently stir in the half and half. Season with kosher salt and freshly ground black pepper to taste. Continue cooking while stirring until the eggs thicken and no liquid remains, approximately 3-5 minutes. Remove from heat and set aside.
  4. Assemble Burritos: Lay the warmed flour tortillas flat. Spread refried beans evenly down the center of each tortilla. Layer cooked tater tots, browned sausage, scrambled eggs, shredded cheddar and Monterey Jack cheeses, diced Roma tomatoes, and chopped fresh cilantro over the beans. Fold in the opposite sides of each tortilla, then roll tightly burrito-style to enclose the filling.
