Dough Ingredients
- 500 g wheat flour (type 405)
- 125 g butter (room temperature)
- 250 ml whole milk (lukewarm)
- 1 packet of dry yeast (or 42 g fresh yeast)
- 100 g raisins (soaked and patted dry)
- 4 eggs (size M)
- 100 g sugar
- 1 pinch of salt
- 1 packet of vanilla sugar
Additional Ingredients
- 100 g onions (for the milk and onion base)
- 1 egg yolk with a splash of milk (for brushing)
- Chop Onions: Chop the onions in the Thermomix mixing bowl for 5 seconds on speed 10 and scrape down the sides to ensure even chopping.
- Heat Milk and Butter: Add the lukewarm milk and room-temperature butter to the chopped onions. Heat the mixture for 5 minutes at 37°C on speed 2, making sure the butter melts completely without the milk boiling.
- Make Dough: Add wheat flour, sugar, dry yeast (or fresh yeast), salt, vanilla sugar, and eggs to the bowl. Knead the dough for 2 minutes on speed 1 to combine ingredients and develop gluten.
- Mix in Raisins: Knead in the soaked and drained raisins for 1-2 minutes at speed 1. Adjust the dough consistency by adding a little more flour or milk if needed.
- First Proof: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 45-60 minutes until doubled in size.
- Prepare for Baking: Punch down the dough briefly, then divide it into three equal parts. Roll each into long strands.
- Braid Dough: Braid the three strands together and place the braid on a baking sheet lined with baking paper or in a braided loaf pan.
- Second Proof: Cover the braid and allow it to rise again for 30-45 minutes to develop a light and airy texture.
- Preheat Oven: Preheat your oven to 180°C using the top and bottom heat setting.
- Brush and Bake: Brush the braided loaf with a mixture of egg yolk and milk to promote a golden crust. Bake for 25-30 minutes, covering with aluminum foil after 15 minutes if it browns too quickly, until the loaf is golden brown.
Notes
- Soak raisins ahead of time for better texture and moisture in the bread.
- Ensure milk is lukewarm, not hot, to properly activate the yeast without killing it.
- If dough is sticky or too dry, adjust with small amounts of flour or milk during kneading.
- Use a thermometer to monitor the oven temperature for consistent baking results.
- Cover the loaf with foil if it browns too quickly to prevent burning.
- Butter room temperature is important for proper mixing and incorporating air into the dough.
