Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes

Filling

  • 1 lb lean ground turkey or beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed

Toppings (Optional)

  • Diced tomatoes
  • Avocado
  • Shredded cheese
  • Sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the sweet potatoes.
  2. Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and prick them several times with a fork to allow steam to escape during baking. Place them on a baking sheet.
  3. Bake Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 45 to 50 minutes until they are tender and easily pierced with a fork.
  4. Cook Meat: While the sweet potatoes bake, heat a skillet over medium heat and cook the ground turkey or beef until browned and fully cooked, breaking it apart as it cooks. Drain any excess fat from the skillet.
  5. Add Beans and Seasoning: Stir in the drained black beans and the taco seasoning packet into the cooked meat. Continue to cook and stir until the mixture is heated through and well combined.
  6. Prepare Sweet Potatoes for Stuffing: Once the sweet potatoes are done baking, carefully split them open lengthwise and fluff the insides gently with a fork to create a nice base for stuffing.
  7. Assemble Taco Stuffed Sweet Potatoes: Spoon the meat and bean mixture generously into each fluffed sweet potato. Add your choice of fresh toppings such as diced tomatoes, avocado, shredded cheese, and sour cream to finish.

Notes

  • You can substitute ground turkey with lean ground beef or even ground chicken according to your preference.
  • For a spicier flavor, add some chopped jalapeños or hot sauce to the meat mixture.
  • Leftover filling can be refrigerated for up to 3 days and reheated for a quick meal.
  • Try adding other toppings like fresh cilantro, sliced green onions, or a squeeze of lime for extra freshness.
