Ingredients

Scale

Main Ingredients

  • 1 ½ pounds fresh Brussels sprouts, trimmed and halved (large ones quartered)
  • 3 tablespoons olive oil, for coating
  • ¾ teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional but recommended)
  • ¼ teaspoon smoked paprika (optional, for subtle depth)

Optional Garnishes

  • 1 tablespoon balsamic vinegar (optional, added after roasting for brightness)
  • 2 tablespoons freshly grated Parmesan cheese (optional garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare the sprouts: Trim the tough stem ends and remove any loose outer leaves. Slice each Brussels sprout in half lengthwise so they roast evenly.
  3. Season: Place the sprouts in a large bowl. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and smoked paprika. Toss well until evenly coated.
  4. Arrange for roasting: Spread the sprouts cut-side down in a single layer on the baking sheet. Make sure they are not overcrowded to promote caramelization instead of steaming.
  5. Roast: Bake for 25–30 minutes, flipping once halfway through, until the edges are deeply golden and crispy while the centers are tender.
  6. Finish and serve: Remove from the oven. Drizzle with balsamic vinegar if using, and sprinkle with Parmesan cheese while still warm. Serve immediately for best texture.

Notes

  • Use fresh Brussels sprouts for best texture; frozen can be used but will be less crispy.
  • Dry the sprouts thoroughly after washing to ensure crispiness.
  • Do not overcrowd the baking sheet to allow even roasting and caramelization.
  • For garlic addition, fresh minced garlic can be stirred in halfway through roasting to avoid burning.
  • Reheat leftovers in a 400°F oven for 5 to 8 minutes to restore crispiness; avoid microwaving if possible.
  • Freezing leftovers is not recommended as it affects texture.
  • Customize with toppings like Parmesan, balsamic vinegar, crushed red pepper, honey mustard, or bacon for varied flavor profiles.
