Ingredients

Scale

Wet Ingredients

  • ¼ cup unsalted butter (melted and cooled slightly)
  • ½ cup pure maple syrup
  • 2 tablespoons oil (canola or vegetable)
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ½ cups quick oats
  • ¾ cup all-purpose flour (white whole wheat flour can be used as a substitute)
  • ½ tablespoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt

Glaze

  • ½ cup powdered sugar
  • 1 to 2 teaspoons whole milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
  2. Combine Wet Ingredients: In a medium mixing bowl, whisk together the egg, oil, maple syrup, vanilla extract, and melted butter until the mixture is smooth and fully incorporated.
  3. Mix Dry Ingredients: In a separate bowl, stir together the quick oats, flour, cinnamon, baking powder, and sea salt ensuring even distribution of all ingredients.
  4. Combine Wet and Dry: Pour the dry ingredient mixture into the wet ingredients. Mix gently until just combined to form a cookie dough.
  5. Shape Cookies: Spoon the dough onto a parchment-lined baking sheet, forming 16 cookies. Gently press down each cookie as they will not spread much during baking.
  6. Bake: Bake cookies in the preheated oven for 8-10 minutes or until set with edges lightly golden brown.
  7. Cool Cookies: Remove from oven and let cookies cool on the baking sheet for 10-15 minutes to set properly.
  8. Prepare Glaze: While cookies cool, whisk together powdered sugar, milk, and vanilla extract until smooth. Transfer the glaze to a small plastic bag, cut a tiny slit at one corner, and drizzle over cooled cookies. Alternatively, spoon glaze over each cookie.

Notes

  • Use white whole wheat flour as a healthier alternative to all-purpose flour.
  • Maple syrup adds natural sweetness and complements the cinnamon flavor.
  • The cookies will not spread much during baking, so press them gently to shape before baking.
  • Allow cookies to cool completely before drizzling the glaze for best results.
  • For a dairy-free option, substitute milk in the glaze with almond or oat milk.
  • Store cookies in an airtight container at room temperature for up to 3 days.
