Puff Pastry and Coating
- 2 sheets puff pastry
- 1 bag (26 ounces) frozen french fries, thawed
- Salt, for seasoning fries
- 1 egg
- 1 tablespoon water
Filling
- 1 pound ground beef
- 1 tablespoon steak seasoning
- 8 ounces cheddar cheese, shredded
- 15 pickles, sliced
- Onions, sliced (optional garnish)
- Tomatoes, sliced (optional garnish)
- Iceberg lettuce (optional garnish)
Dip
- ¼ cup mayonnaise
- ¼ cup Dijon mustard
- ½ cup ketchup
- Prepare the fries: Lay a sheet of plastic wrap over a baking sheet approximately twice the length of the pan. Arrange the thawed fries in a single layer completely covering the surface, then cover with another sheet of plastic wrap. Repeat this with a second baking sheet. Let the fries thaw for 20 minutes.
- Shred the cheese: While the fries thaw, shred the cheddar cheese into a small bowl for easy assembly later.
- Brown the beef: In a frying pan over medium heat, add the ground beef and season with steak seasoning. Cook the beef until browned and no longer pink, then drain excess fat and set aside.
- Cut the puff pastry: Lightly flour a wooden cutting board and lay out the puff pastry sheets. Cut each sheet into three equal rectangular sections. If using Pepperidge Farms puff pastry, cut along the fold lines.
- Assemble the filling: On the top half of each puff pastry rectangle, add a layer of shredded cheddar cheese, about 3 tablespoons of browned ground beef, and sliced pickles. Fold the bottom half of the pastry over the filling and firmly press the edges together to seal the pocket.
- Smash the fries: Using a brownie tin or meat mallet, gently smash the fries on one baking sheet. Remove the top plastic wrap, sprinkle the fries with a pinch of salt, then replace the plastic wrap.
- Brush the pastry with egg wash: Whisk together the egg and water in a shallow bowl. Brush both sides of each pastry pocket with the egg wash to ensure a golden finish.
- Sandwich the pastries with fries: Place the filled pastries on the baking sheet without plastic wrap atop the fries. Then place the baking sheet covered with the plastic wrap on top, sandwiching the pastries between the two layers of fries. Carefully pull out the plastic wrap between the pastries and top fries to hold the fries in place.
- Press fries onto pastries: Remove the top baking sheet gently. Using a knife, separate each pastry and firmly press the fries into the sides of the puff pastry pockets to coat them evenly.
- Chill the pastries: Place the assembled cheeseburger wellingtons into the freezer for at least 10 minutes to help the fries adhere better before baking.
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Bake the wellingtons: Line a baking sheet with a wire rack and place the cheeseburger wellingtons on top. Bake for 25 minutes, or until the puff pastry is golden and crispy.
- Prepare the dip: While the wellingtons bake, combine the mayonnaise, Dijon mustard, and ketchup in a small bowl and whisk until smooth.
- Serve: Serve the cheeseburger wellingtons hot alongside the prepared dip and optional garnishes such as sliced onions, tomatoes, and iceberg lettuce for a complete meal experience.
Notes
- Using thawed fries instead of fresh potatoes makes smashing and baking easier and quicker.
- Ensure puff pastry is cold before assembling for best flakiness.
- Freezing the assembled pockets before baking helps maintain shape and crispiness.
- You can customize the filling by adding sautéed onions or different types of cheese.
- This recipe yields crispy, handheld portions suitable for parties or family dinners.
