Banana Bread Base

  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper, leaving a 2-inch overhang on the long sides for easy removal. Set it aside.
  2. Mash Bananas: In a large mixing bowl, add the 3 ripe bananas. Use a fork or potato masher to mash them until they are mostly smooth with a few small lumps remaining.
  3. Add Melted Butter: Pour the ½ cup of melted and slightly cooled butter over the mashed bananas. Stir with a whisk or fork until well combined.
  4. Add Sugar, Eggs & Vanilla: Add ¾ cup sugar, 2 room-temperature eggs, and 1 teaspoon vanilla extract. Whisk vigorously for about 30 seconds until the mixture is smooth, pale, and slightly thickened.
  5. Add Dry Ingredients: Sprinkle 1 ½ cups flour, 1 teaspoon baking soda, and ½ teaspoon salt directly over the wet mixture. If using mix-ins, sprinkle them on top of the flour now.
