Ingredients

Scale

Chicken Wings

  • 1820 split chicken wings (drumette and winglet)
  • 3 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 1 tsp aluminum-free baking powder (optional)
  • ½ to ¾ cup wing sauce of choice, for tossing

Instructions

  1. Dry the Wings: Pat 18–20 chicken wings very dry using paper towels to remove any surface moisture. This helps ensure crispiness when cooking.
  2. Season the Wings: In a large bowl, combine 3 Tbsp olive oil, 1 tsp paprika, 1 tsp garlic powder, ½ tsp salt, and ½ tsp ground black pepper. If you choose to use baking powder, stir in 1 tsp aluminum-free baking powder as well. Add the wings to the bowl and toss thoroughly until each piece is evenly coated with the seasoning mixture.
  3. Preheat the Air Fryer: Preheat your air fryer to 400°F (204°C) for 2 minutes to ensure it’s hot before cooking the wings.
  4. Arrange the Wings: Place the seasoned wings in a single layer inside the air fryer basket, making sure there is space between each piece to allow proper air circulation. If necessary, cook the wings in batches to avoid overcrowding.
  5. Cook the Wings: Air fry the wings at 400°F for 24–25 minutes. Flip the wings halfway through the cooking time to promote even browning. The wings are done when they reach an internal temperature of 165°F (74°C), and the skin is golden and crisp.
  6. Rest and Sauce: Let the wings rest for about 5 minutes after cooking to allow juices to redistribute. Toss the hot wings with ½ to ¾ cup of your favorite wing sauce until well coated, then let them rest an additional 2 to 3 minutes so the sauce can stick to the skin.

Notes

  • Patting wings dry is crucial for crispy skin.
  • Baking powder helps to make the skin extra crispy but is optional.
  • Do not overcrowd the air fryer basket; cook in batches if needed.
  • Use a meat thermometer to ensure wings reach a safe internal temperature of 165°F.
  • Resting the wings before and after saucing improves texture and flavor adherence.
  • Choose any wing sauce you prefer for tossing, such as buffalo, BBQ, or honey garlic.
