  • 2 tsp white granulated sugar
  • 2 tsp sesame oil (toasted kind)

Instructions

  1. Prepare the Beef: Slice the flank steak against the grain at a 45-degree angle into 1/4-inch-thick strips. Place the sliced beef into a large bowl.
  2. Marinate the Beef: Toss the sliced beef with the marinade ingredients—vegetable oil, water, cornstarch, soy sauce, and baking soda—until evenly coated. Let it sit for 15 to 20 minutes to tenderize and soak up flavors.
  3. Mix the Sauce: In a small bowl, whisk together the sauce ingredients—chicken stock, minced garlic, oyster sauce, dark soy sauce, Shaoxing wine, cornstarch, sugar, and toasted sesame oil—and set aside.
  4. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the marinated beef strips and cook for about 4 to 5 minutes until just cooked through and lightly browned on the edges. Remove the beef from the pan and set aside.
  5. Sauté Vegetables and Thicken Sauce: In the same pan, sauté the julienned onions and quartered mushrooms for about 2 minutes until they soften slightly. Pour in the prepared sauce and simmer for about 30 seconds until it thickens slightly.
