Ingredients

Scale

Marinade:

  • 1 ½ lbs boneless skinless chicken thighs (about 4)
  • ½ cup plain Greek yogurt
  • 1 Tablespoon extra virgin olive oil
  • 2 Tablespoons lemon juice + zest
  • 3 cloves garlic (minced)
  • ½ teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper

Garnish:

  • fresh parsley (for garnish)

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, lemon zest, garlic, onion powder, dried oregano, salt, and pepper.
  2. Marinate the Chicken: Place the chicken in a shallow dish or 1-gallon sealable plastic bag. Add the marinade, toss to coat, and refrigerate for at least 2 hours or up to 24 hours.
  3. Grill the Chicken: Heat a grill or grill pan. Remove chicken from the marinade, shake off excess, and discard leftover marinade. Grill the chicken for about 5-6 minutes per side, until cooked through with grill marks. Ensure the internal temperature reaches 165F.
  4. Serve: Enjoy the chicken immediately with fresh parsley or store for later use.
