Ingredients

Scale

Main Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 bell peppers, diced (green and red)
  • 3 garlic cloves, minced
  • 1 pound boneless, skinless chicken breast
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ¼ tsp chili powder
  • ½ tbsp cumin
  • ½ tsp black pepper
  • 1 (15oz) can diced tomatoes
  • ½ cup chopped green chilies
  • Fresh lime juice from 2 limes
  • 4 cups chicken broth

Optional Toppings

  • Freshly chopped cilantro
  • Diced red onions
  • Lime wedges
  • Avocado

Instructions

  1. Sauté Vegetables: In a large pot, heat the olive oil over medium heat and add the diced onions, minced garlic, and diced bell peppers. Sauté until the onion becomes translucent and the bell peppers soften, enhancing the flavors.
  2. Add Chicken and Seasonings: Add the boneless skinless chicken breast to the pot along with the canned diced tomatoes, chopped green chilies, sea salt, dried oregano, paprika, chili powder, cumin, black pepper, chicken broth, and fresh lime juice. Stir to combine all ingredients.
  3. Simmer Soup: Bring the mixture to a boil, then reduce heat to low. Let the soup simmer for 30 minutes or until the chicken is thoroughly cooked and tender enough to shred easily.
  4. Shred Chicken: Remove the chicken breast from the pot and use two forks to shred it into bite-sized pieces. Return the shredded chicken back to the soup and simmer for an additional 5 minutes to blend flavors.
  5. Serve: Ladle the soup into bowls and top with optional garnishes like freshly chopped cilantro, diced red onions, lime wedges, and avocado. Serve warm for a satisfying meal.

Notes

  • For a spicier soup, increase the chili powder or add a pinch of cayenne pepper.
  • If you prefer a thicker soup, reduce the chicken broth by 1 cup.
  • You can substitute chicken breast with chicken thighs for a richer flavor.
  • Make sure to use fresh lime juice for the best zesty flavor.
  • This soup stores well in the refrigerator for up to 3 days and freezes nicely for up to 2 months.
