  • 1 cup boiling water*
  • 1 cup cornmeal
  • 2 large eggs
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup milk
  • 3 tablespoons milk

For Greasing:

  • 1 tablespoon butter

Optional for Serving:

  • Extra butter
  • Honey

Instructions

  1. Preheat Oven: Place a medium baking dish or cast iron skillet in the cold oven and preheat to 400°F.
  2. Mix Cornmeal: Stir cornmeal into boiling water. Add eggs one at a time, mixing well.
  3. Add Ingredients: Add salt. Dissolve baking powder in 3 tablespoons of milk. Combine with the remaining milk and add to the cornmeal mixture.
  4. Prepare Dish: Butter the hot baking dish and transfer the mixture to it.
  5. Bake: Bake at 400°F for 30 minutes or until set.
  6. Serve: Serve warm with extra butter and honey if desired.
