Instructions

  1. Combine ingredients: Add the penne pasta, vegetable broth, cherry tomatoes, zucchini slices, and diced bell pepper into a large pot. Evenly sprinkle 1 teaspoon of Italian seasoning over the ingredients.
  2. Cook the pasta: Place the pot over medium-high heat and bring to a boil. Once boiling, reduce the heat to a simmer and cook uncovered, stirring occasionally, until the pasta is tender and most of the liquid is absorbed. This should take about 10-12 minutes depending on the pasta brand and stove heat.
  3. Add cheese and serve: Remove the pot from heat and stir in the grated Parmesan cheese if using. Mix thoroughly until the cheese is melted and evenly distributed. Serve the pasta warm, enjoying the medley of fresh vegetables and balanced seasoning.
