Instructions

  1. Sauté onions: Heat olive oil in a large pot over medium heat. Add diced onion and cook, stirring occasionally, until translucent and fragrant, about 3-5 minutes.
  2. Add aromatics and vegetables: Stir in minced garlic, diced sweet potatoes, cumin, chili powder, and tomato paste. Cook for about 3 minutes to allow the spices to bloom and the tomato paste to caramelize slightly.
