Dry Ingredients:

  • 2 cups rolled oats (certified gluten-free)
  • 2 cups chopped nuts (walnuts, almonds or pecans)
  • 1 tsp cinnamon

Wet Ingredients:

  • 1/4 cup coconut oil
  • 1/3 cup honey (or maple syrup, if vegan)
  • 1 tbsp vanilla

Instructions

  1. Preheat and Prepare: Preheat the oven to 300°F and line a baking pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine oats, nuts, and cinnamon.
  3. Prepare Wet Ingredients: In a microwave-safe bowl, melt coconut oil, mix with honey (or maple syrup), warm in the microwave, and add vanilla.
  4. Combine and Bake: Pour the wet ingredients over the dry ingredients, mix well, spread on the pan, and bake for 25-30 minutes until slightly golden.
  5. Cool and Enjoy: Allow the granola to cool completely, break into pieces, and enjoy!
