Ingredients

Scale

Dressing

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber (excess moisture squeezed out)
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves (peeled and grated)
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Salad

  • 4 cups cooked chicken (chopped or shredded)
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, fresh lemon juice, grated garlic, chopped dill, chopped parsley, sea salt, and black pepper. Stir thoroughly until all ingredients are well blended to create a smooth and flavorful tzatziki dressing.
  2. Mix the Salad Ingredients: Add the cooked, chopped or shredded chicken, diced cucumber, celery, red onion, and crumbled feta cheese to the dressing. Gently stir all components together until the salad is evenly coated with the dressing.
  3. Adjust Seasonings and Serve: Taste the salad and adjust the lemon juice, salt, or pepper as needed. Serve the tzatziki chicken salad over fresh greens, with pita chips, inside pita pockets, wrapped in lettuce cups, or as a sandwich or wrap filling. Optionally, top with extra chopped tomatoes, kalamata olives, additional feta, and fresh herbs for enhanced flavor.

Notes

  • To prevent sogginess, be sure to squeeze out excess water from the grated cucumber before mixing.
  • This salad can be made ahead and refrigerated for up to 24 hours; flavors will meld and improve with time.
  • Use rotisserie or leftover cooked chicken to save time.
  • For a low-carb option, serve the salad in lettuce cups instead of pita.
  • Fresh herbs like dill and parsley are essential for authentic tzatziki flavor but can be adjusted based on availability.
