Ingredients

Scale

Cookie Dough

  • 1/2 cup (111g) salted butter
  • 1/2 cup (115g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups (228g) all-purpose flour
  • 1 tsp baking powder

Creamy Caramel Topping

  • 20 caramels, unwrapped
  • 1 tbsp milk

Chocolate Topping

  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
  2. Cream Butter and Sugar: Using a stand mixer fitted with a Flex Edge Beater, cream together 1/2 cup salted butter and 1/2 cup granulated sugar until smooth and fluffy.
  3. Add Egg White and Vanilla: Incorporate 1 egg white and 1 teaspoon vanilla extract into the creamed mixture, mixing until fully combined.
  4. Add Dry Ingredients: Gradually mix in 1 1/2 cups all-purpose flour and 1 teaspoon baking powder until a dough forms.
  5. Shape Cookies: Roll out the dough on a flat surface to a thickness between 1/4 and 1/2 inch. Use a round cookie cutter to cut dough into circles and transfer them onto an ungreased cookie sheet.
  6. Bake Cookies: Bake the cookie circles at 350°F for 6-8 minutes, removing them when they look puffy and are no longer glossy on top.
  7. Cool Cookies: Transfer baked cookies to a wire rack and allow to cool completely before proceeding.
  8. Prepare Caramel: While cookies cool, microwave 20 unwrapped caramels with 1 tablespoon milk for 1 minute, stirring halfway through at 30 seconds. Stir thoroughly until the caramel mixture is smooth and creamy.
  9. Add Caramel: Spoon a few teaspoons of the warm caramel onto each cooled cookie, spreading it until nearly covering the surface.
  10. Chill Caramel Layer: Place the caramel-topped cookies into the refrigerator for 10-15 minutes until the caramel is completely cold and set.
  11. Melt Chocolate: Melt 2 cups of milk chocolate chips in 30-second intervals in the microwave, stirring between each, until fully melted and smooth.
  12. Add Chocolate Topping: Spread a thin layer of melted chocolate over each caramel-topped cookie.
  13. Set Chocolate: Let the chocolate cool and harden completely before serving your delicious Twix Cookie Cups.

Notes

  • Ensure cookies are completely cooled before adding caramel to prevent melting.
  • Use high-quality caramels and chocolate chips for the best flavor.
  • Store finished cookie cups in an airtight container in the refrigerator to keep the chocolate firm.
  • You can substitute milk chocolate chips with dark or white chocolate to vary the flavor.
  • For easier cleanup and cookie removal, line your cookie sheet with parchment paper.
