Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook Ground Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook, stirring occasionally, until browned and fully cooked. Remove beef with a slotted spoon and set aside to drain excess fat.
  3. Sauté Onion and Garlic: In the same skillet, add chopped onion and minced garlic. Sauté until the onions turn translucent and fragrant, about 3-4 minutes.
  4. Cook Vegetables: Add diced potatoes, carrots, and celery to the skillet. Cook for about 5 minutes, stirring occasionally to soften the vegetables without browning.
  5. Add Remaining Ingredients: Stir in corn kernels, cooked ground beef, diced tomatoes with their juice, and beef broth. Season the mixture with salt, black pepper, dried thyme, and rosemary. Mix well to combine all flavors.
  6. Transfer and Bake Covered: Transfer the mixture to a greased 9×13-inch baking dish. Cover the dish tightly with aluminum foil to prevent drying out, then bake in the preheated oven for 30 minutes.
