5 lbs russet potatoes, peeled and cubed
Butter Mixture:
8 tbsp salted butter, melted
2 tbsp salted butter, cold
Creamy Additions:
8 oz cream cheese, softened and cubed
1 c half and half
1/2 tsp salt
Pepper, to taste

Chopped chives
Instructions
Preheat oven to 350°F.
Prepare Potatoes: Peel and cube potatoes, boil until fork-tender, then drain. Return to pot and steam out excess moisture.
Mix Ingredients: In a large bowl or stand mixer, combine potatoes, melted butter, salt, and pepper. Mix in cream cheese and gradually add half and half until desired consistency.
Bake: Spread mixture in a greased 9×13 baking dish. Dot the top with cold butter cubes. Bake for 45 minutes.
Serve: Remove from oven and garnish with chives if desired. Serve hot.
