Pie Crust:

  • 1 recipe for double pie crust

Filling:

  • 2 1/4 lbs Granny Smith Apples (peeled, cored, and thinly sliced)
  • 1 1/2 tsp cinnamon
  • 8 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • 1/4 cup water
  • 1 cup granulated sugar
  • 1 egg (+ 1 Tbsp water, for egg wash)

Instructions

  1. Prepare Pie Crust: Make the pie crust recipe and chill as per instructions. Preheat oven to 425˚F.
  2. Make Filling: Melt butter in a saucepan, whisk in flour, water, and sugar. Simmer, then remove from heat.
  3. Prepare Apples: Peel, core, and slice apples. Toss with cinnamon and sauce.
  4. Assemble Pie: Roll out bottom crust, transfer to pie plate. Add apple filling. Create lattice top crust.
  5. Bake: Brush top crust with egg wash. Bake at 425˚F, then reduce heat to 350˚F and bake until apples are tender.
  6. Serve: Rest at room temperature for 1 hour before slicing and serving.

Notes

  • For a golden crust, sprinkle the top with sugar before baking.
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
