For the Chicken:

  • 2.5 lbs chicken thighs

  • 2 tbsp Thai sweet chili sauce

  • 1 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 3 tbsp brown sugar
  • 3 tbsp lime juice
  • 34 cloves garlic
  • 1 inch ginger root, peeled
  • 1/2 shallots
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Prepare the Marinade: Blend together fish sauce, soy sauce, vegetable oil, brown sugar, lime juice, garlic cloves, peeled ginger root, shallots, and red pepper flakes (if using) in a blender or food processor until smooth.
  2. Marinate the Chicken: Place the chicken thighs in a large bowl or resealable bag and pour the marinade over them. Ensure each piece is well coated. Refrigerate and let marinate for at least 4 hours, preferably up to 24 hours for deeper flavor penetration.
  3. Preheat the Grill or Skillet: Heat your grill or skillet over medium-high heat until hot and ready for cooking.
  4. Grill the Chicken: Place the marinated chicken thighs onto the grill or skillet. Cook undisturbed on one side until you see grill marks and the chicken releases easily from the cooking surface, about 5-7 minutes. Flip and cook the other side until the internal temperature reaches 165ºF (74ºC), ensuring the chicken is thoroughly cooked.
  5. Finish and Serve: Remove the chicken from the heat and sprinkle with chopped cilantro. Serve immediately with Thai sweet chili sauce on the side for dipping or drizzling.
