Ingredients

Scale

Base

  • 4860 frozen tater tots (16-oz bag)

Filling & Topping

  • 3/4 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced (green part only)

Instructions

  1. Preheat oven: Preheat your oven to 450ºF (232ºC) and spray the muffin pan cups with cooking spray to prevent sticking.
  2. Arrange tater tots: For a mini-sized muffin pan, place 2-3 tater tots in each muffin cup. For a regular-sized muffin pan, place 4-5 tots in each cup to form the base for your cups.
  3. Initial baking: Place the muffin pan on the bottom rack of the oven and bake the tots for 10 minutes. Then remove from the oven.
  4. Shape the cups: Spray the bottom of a shot glass or a small juice glass with cooking spray. Insert the glass into each muffin cup and gently twist to press and shape the edges of the tater tots up to the top of the muffin tin opening, forming a cup shape. Return the pan to the oven and bake for an additional 15 minutes, or until the tots are deep golden brown and crispy.
  5. Add cheese and melt: Evenly add 1 tablespoon of shredded cheddar cheese into each potato cup. Bake for 4-5 minutes more until the cheese is melted and bubbly. Then remove from oven and transfer to a serving platter. Let the cups cool for 5 minutes.
  6. Garnish and serve: Top the loaded tater tot cups with a dollop of sour cream, crumbled bacon, and sliced green onions. Serve warm to enjoy the crispy, cheesy appetizer cups at their best.

Notes

  • Use cooking spray generously on the glass used to shape the cups to avoid sticking.
  • For extra flavor, consider adding spices such as paprika or garlic powder to the tater tots before baking.
  • These appetizer cups can be made ahead and reheated in the oven before serving.
  • Substitute sour cream with Greek yogurt for a tangier topping.
  • If you want vegetarian options, omit the bacon and consider adding chopped mushrooms or diced bell peppers instead.
