Ingredients

Scale

Wet Ingredients

  • 2 large eggs
  • 1 cup (200g) light brown sugar
  • 1/3 cup (60g) canola oil
  • 2 large overripe bananas or 3 small bananas, mashed
  • 1/3 cup (75g) pumpkin puree

Dry Ingredients

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg (ground or freshly grated)
  • 1/2 tsp ground ginger
  • 1/2 tsp salt

Instructions

  1. Prepare the Pan and Oven: Preheat your oven to 350°F (175°C). Butter and flour a standard 9×4-inch loaf pan to prevent sticking and ensure easy removal of the bread later.
  2. Whisk Eggs, Sugar, Oil, and Spices: In a large bowl, whisk the eggs and light brown sugar together until light and airy. Gradually add the canola oil while whisking, then mix in the ground cinnamon, nutmeg, ground ginger, and salt to create a flavorful, well-blended base.
  3. Incorporate Bananas and Pumpkin Puree: Mash the overripe bananas thoroughly with a fork, allowing for some small chunks. Add the mashed bananas and pumpkin puree to the egg mixture and whisk until the batter is uniform, leaving a few small banana lumps for extra flavor pockets.
  4. Add Dry Ingredients: Add the all-purpose flour and baking soda to the wet ingredients. Whisk together just until combined and the batter is smooth, avoiding overmixing to keep the bread tender.
  5. Optional: Top with Banana Slice: For a rustic finish, slice a banana lengthwise and gently place one long thin slice on top of the batter before baking.
  6. Bake the Bread: Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until the top springs back when gently pressed and a cake tester inserted in the center comes out clean.
  7. Cool and Serve: Remove the bread from the oven and let it cool in the pan for 5 minutes. Transfer to a cooling rack and cool completely before slicing. The flavors improve after resting overnight.

Notes

  • Using overripe bananas enhances sweetness and moisture.
  • Ensure not to overmix the batter to maintain a tender texture.
  • Canola oil can be substituted with vegetable or melted coconut oil.
  • For a gluten-free version, substitute the flour with a gluten-free blend.
  • Adding nuts or chocolate chips can add texture and flavor variations.
  • Store the bread in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
