Ingredients

Scale

Sausage and Vegetables

  • 1 pound (450g) sausage (Italian or your choice, casings removed)
  • 2 large sweet potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), diced

Seasonings and Liquids

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken or vegetable broth

Toppings and Garnish

  • 1 cup shredded cheese (cheddar or your preference)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the casserole.
  2. Cook the Sausage: In a large skillet over medium heat, cook the sausage, breaking it apart with a spoon. Cook for about 5-7 minutes until browned and fully cooked. Remove the sausage from the skillet and set aside.
  3. Sauté the Vegetables: Using the same skillet, add diced onion and bell pepper. Sauté for approximately 5 minutes until softened. Add minced garlic, smoked paprika, dried thyme, salt, and black pepper, cooking for about 1 more minute until fragrant.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked sausage, sautéed vegetables, and diced sweet potatoes. Pour in the chicken or vegetable broth and stir everything until well mixed.
  5. Assemble the Casserole: Grease a 9×13-inch baking dish. Pour the mixture evenly into the dish and spread it out. Sprinkle shredded cheese evenly over the top.
  6. Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and continue baking for an additional 10-15 minutes until the sweet potatoes are tender and the cheese is melted and golden brown.
  7. Serve: Allow the casserole to cool slightly before serving. Garnish with fresh parsley as desired for a bright, fresh touch.

Notes

  • You can substitute Italian sausage with any flavored sausage you prefer, removing casings before cooking.
  • Use either chicken or vegetable broth depending on your preference or dietary requirements.
  • Feel free to swap cheddar cheese with mozzarella, Monterey Jack, or any cheese you like for different flavor profiles.
  • Make sure sweet potatoes are diced uniformly for even cooking.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
