Strawberry Sauce

  • 5 tablespoons granulated sugar
  • 4 1/2 tablespoons water (divided)
  • 1/2 tablespoon cornstarch

Cheesecake

  • 8 ounces cream cheese (room temperature)
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup full-fat sour cream
  • 1/2 cup heavy cream

Tortilla Chips

  • 5 9-inch white flour tortillas
  • 6 tablespoons butter (melted)
  • 4 1/2 tablespoons granulated sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Strawberry Sauce In a medium saucepan, cook strawberries, sugar, and 1 tbsp water until boiling. Simmer until strawberries break down. Make a slurry with cornstarch and water, add to sauce and cook until thickened. Cool.
  2. Cheesecake Beat cream cheese until smooth. Add sugar, vanilla, sour cream, and heavy cream; beat until fluffy. Chill.
  3. Tortilla Chips Preheat oven. Coat tortillas in butter, press into graham cracker crumb mixture. Cut into triangles, bake until crispy.
  4. Assemble the Nachos Arrange chips on a platter. Pipe cheesecake mixture over chips, drizzle with strawberry sauce. Serve immediately.
