  • 1 cup sifted cake flour

Syrup:

  • 1/4 cup granulated sugar
  • 3/4 cup hot water
  • 3 tablespoons rum (optional)

Custard Buttercream Frosting:

  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon water
  • 1/2 cup sweetened condensed milk
  • 1 cup unsalted butter
  • 1/2 tablespoon olive oil
  • 4 tablespoons unsweetened cocoa powder

Topping:

  • 1/2 cup golden brown cookie crumbs

Instructions

  1. Make the Sponge Cake: Preheat oven, beat eggs and sugar, fold in flour, bake, and cool.
  2. Make the Syrup: Dissolve sugar in hot water, add rum, and cool.
  3. Make the Custard Buttercream Frosting: Whisk ingredients, heat, cool, beat butter, add custard, divide, and add cocoa.
  4. Assemble the Cake: Brush cake with syrup, spread vanilla frosting, roll, spread chocolate frosting, sprinkle crumbs, and refrigerate.
