Instructions

  1. Prepare Muffin Pan: Spray 9 cups of a muffin pan with cooking spray to prevent sticking during baking.
  2. Soften Cream Cheese: Microwave the cream cheese in 10-second increments until soft and melted but not steaming. Then add egg, olive oil, and dried dill. Mix thoroughly until well combined.
  3. Combine Filling Ingredients: In a separate bowl, mix chopped fresh spinach, crumbled feta, and bacon bits. Pour the cream cheese mixture on top, season with salt and pepper, and mix everything evenly with a fork.
  4. Prepare Pastry Cups: Cut the thawed puff pastry sheet into 9 equal squares. Line each muffin cup with one square, stretching slightly if needed, and press firmly into the base and sides.
  5. Fill and Fold Puffs: Evenly spoon the spinach filling mixture into each pastry-lined muffin cup. Bring the four corners of each pastry square together over the filling and pinch them to seal. Lightly brush the tops with melted butter for golden color.
