Instructions

  1. Boil Potatoes: Place the small white potatoes in a pot and fill with enough water to cover the potatoes by about an inch. Add about a tablespoon of kosher salt to the water. Bring to a boil over medium-high heat and cook the potatoes until they are fork-tender, approximately 15 minutes.
  2. Drain and Cool: Drain the potatoes thoroughly in a colander and let them cool until they are easy to handle, about 10 minutes.
  3. Season and Coat: Preheat your oven to 450°F (230°C). Transfer the cooled potatoes to a mixing bowl. Add the extra-virgin olive oil, garlic powder, kosher salt, and freshly ground black pepper. Stir well to coat all the potatoes evenly in the seasoning mixture.
  4. Smash the Potatoes: Place the seasoned potatoes on a baking sheet. Using the bottom of a glass or a potato masher, gently smash each potato to about ½-inch thickness. Thinner smashed potatoes will become crispier but may break apart more easily.
  5. Bake Until Crispy: Bake the smashed potatoes in the preheated oven for 25 to 30 minutes or until they are golden brown and crispy around the edges.
  6. Add Parmesan Cheese: Remove the baking sheet from the oven and evenly sprinkle the freshly grated Parmesan cheese over the smashed potatoes. Return to the oven and bake for an additional 5 minutes to melt the cheese and further crisp the edges.
