For the Yogurt Sauce:

  • 1 cup plain Greek yogurt (whole, 2%, or lowfat)
  • 24 garlic cloves, minced or finely grated
  • 2 teaspoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1½ teaspoons kosher salt, divided

For the Chicken:

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil (optional, for searing)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • Juice of 1 lemon
  • 23 garlic cloves, minced
  • ½ cup chicken broth or water

Instructions

  1. Make the Yogurt Sauce: In a small bowl, combine Greek yogurt, minced garlic, lemon zest, lemon juice, and ½ teaspoon kosher salt. Stir until smooth. Refrigerate until ready to serve.
  2. Prepare the Chicken: Place chicken in the bottom of the slow cooker. Sprinkle with remaining salt, oregano, thyme, pepper, and minced garlic. Pour in lemon juice and chicken broth.
  3. Cook the Chicken: Cover and cook on low for 4–5 hours or on high for 2½–3 hours, until the chicken is tender and cooked through.
  4. Shred or Slice: Remove the chicken and shred or slice as desired. Optional: return to slow cooker to soak in juices before serving.
  5. Serve: Serve warm chicken with a generous dollop of the lemon Greek yogurt sauce. Garnish with chopped fresh parsley, if desired.
