For the Cheese Mixture:

  • 3/4 cup part-skim cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley (plus more for garnish)

For the Meat Sauce:

  • 1/2 pound 93% lean ground beef (raw)
  • ½ teaspoon kosher salt
  • ½ tablespoon olive oil
  • ½ medium yellow onion (diced)
  • 3 cloves garlic (chopped)
  • 2 ½ cups crushed tomatoes (I like Tuttorosso)
  • 2 ½ cups chicken bone broth
  • ¼ cup fresh basil (chopped)
  • 8 ounces pasta (such as Mafalda pasta, Campanelle, bow-tie pasta broken lasagna noodles, Reginetti or or gluten-free pasta)
  • ¾ cup part skim shredded mozzarella cheese

Instructions

  1. Prepare the Cheese Mixture: In a small bowl, combine the cottage cheese, Parmesan cheese, and parsley.
  2. Cook the Meat Sauce: Heat a large oven-safe nonstick skillet over high heat. Add the beef and salt, cook until browned. Add oil, onion, and garlic, sauté until tender. Add tomatoes, broth, and basil. Stir and bring to a simmer.
  3. Cook the Pasta: Add pasta to the skillet, stir and spread evenly. Simmer covered until pasta is tender and sauce thickens.
  4. Layer and Broil: Dollop cheese mixture over pasta, top with mozzarella. Broil until cheese melts and browns slightly. Garnish with parsley and serve.

Notes

  • You can customize the cheese mixture with ricotta or different herbs for extra flavor.
  • Feel free to add more vegetables like spinach or bell peppers to the sauce for added nutrition.
