Ingredients

Scale

Main Ingredients

  • 1 pound smoked sausage
  • 8 ounces white cheddar cheese
  • 15 ounces whole cranberry sauce (1 can)
  • 1 tbsp fresh parsley, snipped

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Cut Cheese and Prepare Cranberries: Cube the white cheddar cheese into 30 evenly sized pieces. Carefully separate 30 whole cranberries from the cranberry sauce and set both aside for assembly.
  3. Slice Sausage: Cut the smoked sausage into 1/2-inch thick slices ensuring even thickness for uniform cooking. Arrange the sausage slices in a single layer on the prepared baking sheet.
  4. Bake Sausage: Bake the sausage slices for 15 to 20 minutes until they start to brown around the edges. Watch closely as thinner slices may brown faster to avoid overcooking.
  5. Assemble Bites: Remove the baking sheet from the oven and top each browned sausage slice with a cheese cube followed by one whole cranberry placed atop the cheese.
  6. Add Skewers and Garnish: Insert a toothpick or small skewer through the cranberry and cheese into the sausage slice to hold the bites together. Transfer the assembled bites onto a serving platter and sprinkle with freshly chopped parsley.
  7. Serve: Serve the bites warm alongside the remaining cranberry sauce for dipping.

Notes

  • If you prefer spicier sausage, choose smoked andouille or add a dash of hot sauce to the cranberry sauce.
  • Use a sharp cheddar for a more pronounced cheese flavor or substitute with gouda for a milder taste.
  • These bites can be prepared ahead up to the assembly step and refrigerated; bake just before serving.
  • For a gluten-free version, verify that the smoked sausage does not contain gluten fillers.
  • Adjust the baking time if using thicker or thinner sausage slices to ensure even cooking.
