Ingredients

Scale

Beef and Marinade

  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper

Vegetables and Aromatics

  • 1 bunch scallions (green onions), chopped (white and green parts separated)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced

Cooking Oils

  • 2 tablespoons vegetable oil, divided

Serving Suggestion

  • Cooked rice or noodles (for serving)

Instructions

  1. Marinate the Beef: In a bowl, combine the soy sauce, oyster sauce, cornstarch, rice vinegar, sesame oil, and black pepper to create the marinade. Add the thinly sliced beef, tossing to coat it evenly. Let the beef marinate for at least 10 minutes while preparing other ingredients for enhanced flavor and tenderness.
  2. Stir Fry the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer and stir fry briskly for 2-3 minutes until the beef is nicely browned and cooked through. Remove the beef from the pan and set aside to prevent overcooking.
  3. Stir Fry the Vegetables: In the same pan, add the remaining 1 tablespoon of vegetable oil. Sauté the minced garlic and ginger for about 30 seconds until fragrant. Then add the white parts of the scallions and stir fry for approximately 1 minute until they begin to soften and release their aroma.
  4. Combine and Serve: Return the cooked beef to the pan with the scallions, garlic, and ginger. Stir everything together well and cook for another minute to allow flavors to meld and the beef to heat through. Remove the pan from heat, stir in the green parts of the scallions for freshness, and serve hot over steamed rice or noodles.

  • Beef can be substituted with chicken, shrimp, or tofu for variations in protein.
