Garlic Butter Base

  • 2 whole bulbs garlic
  • 2 teaspoons olive oil
  • 8 ounces (226 grams) unsalted butter, at room temperature
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon sea salt

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (180ºC) to prepare for roasting the garlic bulbs.
  2. Prepare Garlic: Cut each garlic bulb in half horizontally, exposing the cloves inside, then spread the olive oil evenly over the cut surfaces to ensure even roasting and prevent drying out.
  3. Wrap and Roast: Rejoin the garlic halves to form the bulbs again and wrap them tightly in aluminum foil to trap moisture and allow for slow caramelization. Place in the oven and roast for 45 minutes, or until the garlic is golden brown and soft.
  4. Cool the Garlic: Remove the garlic from the oven and allow it to cool for about 10 minutes so it’s safe to handle but still soft inside.
  5. Extract Roasted Garlic: Open the foil and gently squeeze each bulb to push the roasted garlic cloves out into a small bowl. Alternatively, use your fingers to peel the buttery cloves from the skins. Ensure the garlic is completely cooled before combining.
  6. Combine Ingredients: Add the room temperature butter, chopped fresh parsley, and sea salt to the roasted garlic in the bowl.
  7. Mash Together: Use a fork to thoroughly mash the roasted garlic into the butter and mix until all ingredients are well combined and creamy.
  8. Chill and Shape: For immediate use, spoon the garlic butter onto a serving dish. To store, place the butter mixture onto a piece of non-stick parchment paper, roll it into a log shape, twist the ends tight, and refrigerate for at least 2 hours until firm.
  9. Serve: Once chilled and firm, slice the garlic butter log into rounds and serve over warm bread, grilled vegetables, or meats to enhance your dishes with rich roasted garlic flavor.

Notes

  • Use unsalted butter to control the salt level precisely, but adjust seasoning as needed.
  • The roasted garlic butter can be stored in the refrigerator for up to 1 week or frozen for up to 3 months.
  • If you prefer a smoother texture, pulse the mixture in a food processor after mashing.
  • Fresh parsley adds brightness, but you can substitute with other fresh herbs like chives or thyme.
  • This compound butter is excellent for elevating grilled steak, roasted vegetables, or spread on warm baguette slices.
