Ingredients

Scale

Carrots

  • 1 pound carrots, peeled, ends trimmed and cut in half lengthwise
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • Freshly ground black pepper, to taste

Herbed Goat Cheese

  • 1 batch herbed goat cheese (recipe or pre-prepared)

Puff Pastry

  • 1 (9×13 inch) sheet frozen puff pastry, thawed
  • 1 large egg

Topping and Garnish

  • 2 cups fresh arugula
  • 1 tablespoon extra virgin olive oil
  • ¼ cup chopped toasted walnuts or toasted sliced almonds
  • 1 to 2 tablespoons hot honey, for drizzling

Instructions

  1. Preheat and Prepare Carrots: Preheat the oven to 400°F (204°C) and line a medium or large baking sheet with parchment paper. Place the prepared carrots on the baking sheet, drizzle with olive oil, season with kosher salt and freshly ground black pepper, then turn the carrots cut side down and arrange them in a single layer.
  2. Roast Carrots: Bake the carrots for 15 minutes in the preheated oven until tender but still holding their shape. Remove from oven and keep the oven heat on.
  3. Prepare Herbed Goat Cheese: While the carrots roast, prepare the herbed goat cheese according to your preferred recipe or use a prepared batch.
  4. Prepare Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry into an approximately 10-by-14-inch rectangle. Line a large baking sheet with parchment paper and transfer the puff pastry onto it. Prick the surface of the puff pastry all over with a fork to prevent excessive puffing during baking.
  5. Assemble Tart: Spread the herbed goat cheese evenly over the puff pastry, leaving a 1-inch border around the edges. Arrange the roasted carrots on top of the goat cheese, placing them cut side down.
  6. Egg Wash: Beat the large egg in a small bowl and brush the edges of the puff pastry with the egg wash to promote a golden, crisp crust when baking.
  7. Bake Tart: Bake the assembled tart in the oven for 20 to 25 minutes, until the puff pastry is deeply golden and crisp.
  8. Add Toppings and Serve: Remove the tart from the oven. Top it with fresh arugula, drizzle with extra virgin olive oil and hot honey, then sprinkle with toasted walnuts or almonds and a pinch of flaky sea salt. Use the parchment paper to transfer the tart to a cutting board, cut into 9 or 12 rectangles, and serve warm or at room temperature.

Notes

  • For the herbed goat cheese, you can mix plain goat cheese with fresh herbs like chives, parsley, thyme, or rosemary according to your taste.
  • Hot honey adds a lovely spicy sweet contrast but can be substituted with regular honey or left out if preferred.
  • Use toasted nuts for extra crunch and flavor; walnuts and almonds both work well.
  • The tart is best served the same day but can be stored in the refrigerator and reheated gently before serving.
  • Ensure the puff pastry is fully thawed at room temperature for easier rolling and baking.
