Ingredients

Scale

For the Cookies:

  • 1 cup unsalted butter (softened)
  • 1 cup light brown sugar (firmly packed)
  • ½ cup granulated sugar
  • 1 large egg + 1 egg yolk (room temperature preferred)
  • 1 ½ teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups rice krispie cereal
  • 1 ½ cups mini marshmallows

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the butter and sugars until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the egg, egg yolk, and vanilla extract until well-combined.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet mixture until fully combined.
  6. Add Cereal and Marshmallows: Stir in the rice krispie cereal and mini marshmallows until evenly distributed.
  7. Shape Cookies: Scoop the dough into 3 tablespoon-sized portions, roll into balls, and place on the baking sheet.
  8. Bake: Bake in the preheated oven for 13-14 minutes until the edges are lightly golden.
  9. Cool: Allow the cookies to cool on the baking sheet before serving.

Notes

  • If the cookies spread too much during baking, chilling the dough for 30 minutes can help.
