Dry Ingredients:
- 1 3/4 cups all-purpose flour
- 1 tablespoon pumpkin spice (or cinnamon)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 1 (15 oz) can pumpkin puree (not pumpkin pie filling)
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tablespoon vanilla extract
- Preheat Oven: Preheat oven to 375°F. Grease a 9×5 loaf pan and line with parchment paper for easy removal.
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt.
- Mix Wet Ingredients: In a large bowl, combine pumpkin, granulated sugar, and brown sugar. Add eggs, vegetable oil, and vanilla extract. Slowly mix in the dry ingredients until smooth.
- Bake: Pour batter into the loaf pan and bake for 50-55 minutes, until a toothpick comes out clean. Cover with foil after 30 minutes to prevent over-browning.
- Cool and Serve: Let the bread cool for 10 minutes in the pan, then remove and slice. Serve warm or store once completely cooled.
