Ingredients

Scale

Dry Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon pumpkin spice (or cinnamon)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 (15 oz) can pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat Oven: Preheat oven to 375°F. Grease a 9×5 loaf pan and line with parchment paper for easy removal.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt.
  3. Mix Wet Ingredients: In a large bowl, combine pumpkin, granulated sugar, and brown sugar. Add eggs, vegetable oil, and vanilla extract. Slowly mix in the dry ingredients until smooth.
  4. Bake: Pour batter into the loaf pan and bake for 50-55 minutes, until a toothpick comes out clean. Cover with foil after 30 minutes to prevent over-browning.
  5. Cool and Serve: Let the bread cool for 10 minutes in the pan, then remove and slice. Serve warm or store once completely cooled.

Notes

  • This bread is even better the next day as the flavors have a chance to meld.
  • You can add nuts or chocolate chips for extra texture and flavor.
