  • 1 cup sugar
  • 3 teaspoons vanilla extract

  • 1/2 cup sour cream
  • 1 20 oz can crushed pineapple, drained (reserve 23 tablespoons of juice for the glaze)

  • 1 1/2 cups powdered sugar
  • 23 tablespoons reserved pineapple juice

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a standard bread pan and set aside.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Prepare Wet Ingredients: In a separate large bowl, beat the softened cream cheese, sugar, vanilla extract, and egg until smooth and creamy.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the sour cream, followed by the drained crushed pineapple.
  5. Bake the Bread: Pour the batter into the prepared bread pan. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 15-20 minutes before transferring it to a wire rack to cool completely.
  6. Prepare the Glaze: In a small bowl, mix the powdered sugar and reserved pineapple juice until smooth. Adjust the consistency with more juice if needed.
