Graham Cracker Crust:
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup salted butter (melted)
Cheesecake Layer:
- 3 – 8 oz. packages cream cheese (softened)
- 1 cup granulated sugar
- 1 ½ tablespoons all-purpose flour
- 2 teaspoons vanilla extract
- ½ cup sour cream (room temperature)
- ½ cup heavy whipping cream (room temperature)
- 3 large eggs (room temperature)
Peaches Layer:
- ¼ cup salted butter (½ stick)
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- 6 cups sliced fresh peaches
- 2 tablespoons cornstarch
Cobbler Topping:
- 1 package yellow cake mix
- ½ cup salted butter (softened)
- ½ teaspoon cinnamon
- 2 tablespoons heavy cream
- Cheesecake Layer: Grease a 9” springform pan and line the bottom with parchment paper. Preheat the oven to 425°F. In a medium mixing bowl, combine graham cracker crumbs, melted butter, and ⅓ cup granulated sugar. Press mixture into the pan. Beat cream cheese until fluffy. Add sugar, flour, vanilla, sour cream, and whipping cream. Add eggs one at a time. Pour half of mixture into crust. Bake in a water bath for 15 minutes.
- Peaches Layer: Prepare peaches by cooking with butter and sugars until soft. Thicken with cornstarch mixture. Layer peaches over partially cooked cheesecake and bake for 45 minutes.
- Cobbler Topping Layer: Mix cake mix, butter, and cinnamon to form crumbles. Drizzle in heavy cream. Top cheesecake with peaches and cobbler mixture. Bake for 15 minutes until golden brown. Cool and chill before serving.
