To Garnish

  • Extra parmesan cheese
  • Lemon zest
  • Fresh pea shoots
  • Black pepper
  • Extra virgin olive oil

Instructions

  1. Make the Pea Topping: Place frozen peas, pea shoots, grated parmesan cheese, olive oil, lemon juice, and half a clove of garlic into a food processor. Pulse until coarsely chopped and combined into a rough paste. Season with salt and pepper to taste. Set aside.
  2. Prepare the Bread: Preheat your broiler or grill to high. Drizzle the ciabatta slices evenly with olive oil.
  3. Toast the Bread: Place the bread slices under the broiler or on the grill for 2-3 minutes on each side, until crisp and golden brown.
  4. Rub Garlic on Toast: While the toast is still warm, rub the remaining half clove of garlic lightly over the surface of each slice to infuse subtle flavor.
  5. Assemble Bruschetta: Spread the prepared pea topping evenly over each toasted slice.
  6. Garnish: Top each bruschetta with additional parmesan cheese, a sprinkle of lemon zest, some fresh pea shoots, a drizzle of extra virgin olive oil, and finish with a dash of black pepper.
